Chief’s Modern Cocktail Parlor debuts with a sense of legacy in NoDa

Stronger than a drink, is the intention with which Built On Hospitality opens its latest venture, Chief’s. Craft cocktails created by famed mixologist Bob Peters are the star, but the legacy of Peters’ parents as welcoming hosts may be what makes people settle in and relax.

As Chief’s Modern Cocktail Parlor in NoDa celebrates opening weekend January 4, it may feel like a bit of a homecoming for Bob Peters. The cocktail bar, situated in an old mill house next to The Goodyear House, is named after Peters’ late father, known to the grandkids as Chief.
Guests at Chief’s can expect a drink menu of craft cocktails created by Peters, plus the classics, as well as snacks and desserts.

Built On Hospitality, which also owns The Goodyear House, spent over a year on plans to renovate the 121-year-old mill house on North Davidson Street. Partner and executive chef Chris Coleman says the space is a welcome and needed addition to NoDa, which he calls “an elevated yet comfortable space” to experience craft cocktails and small plates “with the charm and history that a restored mill house brings.”
Peters’ late father, Chief, was an architect by trade and the interior setting by Delgar Interior Design reflects his penchant for character and comfort: hardwood floors, wood trim, and millwork mixed with a combination of upholstered and leather seating, marble top tables and table lamps.
“My parents taught me everything I know about hospitality. I’m grateful to Built On Hospitality for the opportunity to create Chief’s in their memory, and I can’t wait to share this special place with everyone,” says Peters. “Not everyone had the honor of knowing Chief and Marmee while they were with us, but we’ve worked really hard to share their legacy and spirit at Chief’s.”
As for the snack menu, Coleman included nostalgic items like Churched Up Chex Mix, Tinned Oysters Rockefeller, and Marmee’s Popcorn with “Tickle Your Throat” BBQ seasoning. The dessert menu, created by The Goodyear House pastry chef Becca Rankin, includes sweet comforts like Warm Cookies, Chief’s Root Beer Float, and Homemade Fudge tossed in espresso, cinnamon, and sugar.
